Answer:
BCC & Forwarding addresses are generated when a New User is created and is based off the user's initial login email.
Once it has been created, the BCC & Forwarding email cannot be adjusted (however it will still work). The email is for users, and is not visible to guests when sending emails from Event Temple. Read more on BCC and Forwarding here!
When Users leave it is best practice to Deactivate the old User and create a new one; rather than editing the old User to avoid this issue.
Note: Only Admin Users can manage Users
