Answer:
If a Booking does not exist when you send an email to Event Temple, a new one will be created. You can choose the Pipeline Stage the Booking is created under by going to Settings> Personal Settings> Email> BCC and Forwarding. You can then edit which Pipeline and Stage it will be created in.
