Answer:
Currently, there is no way to change the Assigned User to Workflow Steps when building a Workflow Template or when adding a Workflow to a Booking.
By default, tasks are assigned to the Booking Assignee, and emails are sent from them.
Once a Workflow Task is created, it can be reassigned to another User.
If the Booking itself is reassigned, future Workflow emails will come from the new Assignee, and you’ll have the option to assign any incomplete Workflow Tasks to them as well.
