Answer:
Currently, there is no way to change the Assigned User to Workflow Steps when building a Workflow Template or when adding a Workflow to a Booking.
Tasks will automatically be assigned to the Booking Assignee, and emails will be sent from the Booking Assignee.
When a Workflow Task has been created, it can then be re-assigned to a different User.
If you re-assign the Booking to another User, any future Workflow emails will be sent from the new assignee. You can also choose to assign the remaining incomplete Workflow Tasks to them.
