Answer:
If you need to reduce the Package Price to a standard price going forward this can be done in Packages within the settings.
However, if you need to give a one-off discount the best way to do this would be to apply a Discount to the Booking. This can be done by completing the following steps:
From the Booking Details Page, Click the Menu Items Sub-Tab
Add a Single Item
Name it what you would like to call it (e.g. Package Discount)
Add in a negative value of the amount you would like to discount (and adjust any taxes, revenue categories etc)
This will now add a discount to the Revenue
On the Invoice, it will appear as such.
