Answer:
If there is a date missing for your Room Block in your Documents, this may be occurring if there are no rooms selected for that night.
In the below example, my Group is staying for 2 nights, but only 1 night is showing.
A day will not populate in your Document for the Room Block Document Element if there are no rooms selected for that day.
To correct this, you will need to Add the Block and/or Pickup that you would like for the day within the Group section of your Booking.
