Answer:

Currently, notifications for Stripe payments will go to the Assignee of the Booking.

Submitted Document notifications are sent to whoever created the Document as well as the Assignee of the Booking.

As a workaround, you could set up an auto-forwarding rule in your various user's email accounts for this. For example, when we send a notification to User A, User A's email provider will then forward them to User B. Please note, email forwarding rules and setup will be dependent on your email provider.
