Procedure:

When composing a new Email or adding an Email Template, you can pick the Event to pull the specific merge fields.

If you do not select an Event, but have picked a Document with a Primary Event, then the Primary Event of the Document will be used. If no Document or Event is selected then the Event with the earliest start date/time will be used.
