Answer:
Booking Statuses are hardcoded in the system, it's not possible to add/modify them however it is possible to customize Pipeline Stages for any situation.
Another alternative is to change the Booking Status to Lost, with a specific lost reason eg 'Postponed'. When the guest rebooks, change the Booking status to Definite.
There is an existing feature request in our feedback portal to give users the ability to add Custom Booking Status. Upvote & track the request here!
